多酚氧化酶(polyphenol oxidase,简称PPO EC1. 14. 18. 1)是植物体中广泛分布的核基因编码的质体铜金属酶.由于与植物的酶促褐变密切相关,并会降低植物的经济价值,因此PPO的研究一直比较活跃,其研究大多集中在植物中有经济价值的部分以及经济价值丧失有关的过程中.近年来, PPO研究的主要成果可以概括为以下几个方面: PPO的克隆, PPO的生化特征及其活性控制,潜伏PPO的诱导和活化, PPO的生理功能, PPO的催化机制以及PPO的应用等方面,本文在回顾和总结近年来PPO研究主要成果的基础上,指出了PPO最新的研究热点,建立了一些有肯定性的理论,并对其未来的研究进行展望.
Characteristics of polyphenol oxidase in plants

Polyphenol oxidase (shorter form PPO EC1. 14. 18. 1) is a ubiquitous copper metalloenzyme
which is encoded by nucleicgenes in the plastids of many plant. Enzymatic browning reaction related to PPO can decrease the economic value of plants, so PPO research is continuously active. Its research mostly concentrates in the economic value part of plants as well as the economic value loses in the related process. In recent years, the PPO research achievements are summarized as below: the PPO clone, the PPO biochemistry characteristic and the active control, the latent PPO induction and the activation, the PPO physiological function, the PPO catalyzed mechanism as well as PPO application, and so on. The main achievement in recent years have reviewed and summarized in this paper, in this foundation, indicating the PPO recent research focus, establishing some affirmative theories, future work also being prospected. |
